About this agave distillate:
– By Master Distiller, Delfino Tobon Mejia
– 10 – 15 years old agave Papalome (a. potatorum) – From San Pablo Ameyaltepec, Puebla
– Single distilled in a homemade three-plate steel and copper hybrid still, second distillation with cooked chicken and Mole Poblano.
The result is a pechuga that is exceptionally polished, effervescent and unlike any pechuga style agave spirit around.
Nose – Oatmeal, cedar, chamomile, lemonade.
Palate – Creamy dessert, matcha macaron, sweet chocolate, nuts, cinnamon spice.
