This single cask whisky is matured in American oak casks previously used to mature Australian tawny port-style fortified wine. The result is a flavour profile combining aspects of both our French and American oak styles, with the caramel, vanilla and bright woodiness of American oak combining with the rich dried fruit and molasses character of fortified wine.
Nose – Opens like the beginning chapter of a good adventure novel and inspires a literal thrill of anticipation, is that Gandalf knocking on the door of your senses?! Apothecary box, outdoor swimming pool (in a good way!), molasses, biltong, freshly oiled leather in a tack room and smoked sea salt. Honey roast ham and a drizzle of apricot syrup complete the introduction
Palate – The savoury elements are joined by a plot twist of sweet and juicy plum jam, chocolate stuffed charred banana skins on a beach bonfire and treacle toffees. The viscous mouthfeel compliments the flavours perfectly. In time a delicate wisp of cinnamon and spice rub joins the fray
Finish – The finish introduces a more mature element to this whisky with clarified butter, fleur de sel on rich chocolate truffles, cigar smoke and Brazil nuts. An Autumnal nostalgic pop of toffee apples brings the adventure to a close. Is there a sequel? Better have another sip…
