Plantation Australia 2009, distilled in pot stills. Matured 11 years in ex-bourbon barrels, then 1 year in Ferrand casks. Finish with 4 months in Palo Cortado Sherry cask.
Nose – Fruity on pear, mandarin jam, grapefruit zest and dried apricot. Spicy notes of pepper, cloves, cinnamon, anis and pistachio with oxidative and vinous touches of the Palo Cortado.
Palate – Well balanced between the rum, oak and the sherry on chocolate, almond, cherry, blueberry, banana, bitter orange and some elegant rose notes.
