This Signature Rum is made with fermented Australian sugar cane juice double distilled and stashed away in first re-use ex-Bourbon barrels. It serves a term at high strength, is drawn off and broken back to bottling strength then returned to the barrels. Shaped by the Riverland climate and ghosts of Bourbon past, the result is pure gold.
Tasting Notes – Golden good looks and aromas of butterscotch, ginger and vanilla oak. Warm as sunshine over cane fields, smooth yet spiked with the tang of marmalade and a nip of ginger spice.
